Drops of Rosé in Time
From the slopes of Mt Paiko, where the earth meets the sky and the vineyards
breathe in the wind, a rosé with soul and character is born. A wine that speaks
the language of Xinomavro, dynamic and sharp, and whispers the notes of
Cabernet Sauvignon, like an old romantic poet's sonnet.
Its color, rosy like the first caress of dawn, dances in the glass, playing with
the reflections of light. Its aromas, fruity and full of life, unfold like flowers that
open their petals at the touch of the sun.
The winemaking is careful, almost ritualistic: the marc experiences the
coolness of cold extraction, allowing time to unlock their most gentle aromas.
The alcoholic fermentation transforms the juice into a distillate of flavor and
life, while the fine lees give it body, depth, and duration.
Sip by sip, the wine is imprinted onto the palate with balance, giving rise to
rich aromas. It wonderfully embraces the olive oil vegetable gastronomic
creations of Greek traditional cuisine that oozes tradition, pasta that satisfies
the soul, fatty fish that embraces sea nostalgia, red sauces that burn with
passion, and spicy touches that seek a companion.
Served at 11-13°C, where the coolness highlights its nobility and the wine
speaks its own language - a language full of memories of the soil, the sun,
and the winemaker's labor.

Composition: Xinomavro 90% – Cabernet Sauvignon 10%
Vinification: The marc is cold-pressed before alcoholic fermentation. The wine
remains in contact with the fine wine lees, acquiring depth and a rich body.
Tasting Notes: Rosé, fruity and aromatic, with balanced acidity and a strong
personality.
Gastronomic Combinations: It accompanies delicious pastries and pasta,
highlights vegetable dishes cooked in an olive oil sauce and red sauces, while
balancing perfectly with fatty fish and spicy flavors.
